espite being very young, Sebastian Sartorelli, from Trentino on his father’s side and German from his mother’s, already has a rich curriculum that makes him a hope of the Trentino cooking scene.
His is a modern cuisine but always carefully looking at the tradition. A Mediterranean cooking, strongly passed down by his Tuscan grandma, where the influences of the several restaurants he has worked in merge.
The incredible passion that identifies hilm has led him to take on a TV experience. He has in fact partecipated in the Food Network Talent Show, showing off his peculiar features.
The talented Chef Seba’s distinctive trait (he likes being nicknamed “Seba”) is his “cooking painting”.
To him, the plates turn into blank canvas on which painting colorful and precious raw materials, creating a color effect that is goof for the eyes, the body and the soul.
His paintings are realised with natural products that don’t deteriorate. A blank canvas where it is possible to leave a creative brushstroke using brushes, spatulas and spoons.
His mentors have been the Michelin – starred chef Alfredo Chiocchetti, and whose wings he worked at the Lo Scrigno del Duomo restaurant in Trento, as well as his Japanese colleague and friend Junia Ishikawa, who has passed him on the respect for the raw materials and some exotic tricks of the trade.
He then worked at the “Le Calandre” restaurant in Rubano (Padova), under the supervision of the Michelin - starred chef Massimiliano Alajmo and together with the Michelin - starred chef Diego Rigotti (Italy’s best emerging chef in 2012). He has finally come to the Hosteria Toblino restaurant in Sarche (Trento), where his fantasy and creativity blend perfectly with the excellent raw materials, prepared in an elegant and refined union.
D uring Garda con Gusto - Gourmet Experience Chef Sebastian Sartorelli will surprise us with his Aperitivo di Gusto Show Cooking on Saturday, the 2nd of November at 5.30 pm, where he will serve some little gourmet suggestions. We will also toast with some great bubbles Ferrari Trentodoc, some drinks prepared with products from the Institution for the Protection of the Grappa from Trentino and many other local products.
